Ingredients
- Dry
- 2 ½ cups spelt flour
- 2 cups Sucanat
- ¾ cup cocoa powder
- 1 ½ teaspoons baking soda
- ½ teaspoon Celtic Sea Salt
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- Wet
- 6 tablespoons extra-virgin olive oil
- 2 ¼ cups water
- 2 tablespoons apple cider vinegar
- 1 teaspoon vanilla
- 1 teaspoon maple syrup
- ½ teaspoon molasses
- ½ teaspoon honey
- Frosting
- 2 cups chocolate chips
- 12 ounces silken tofu
- 2 tablespoons maple syrup
- 1 ½ teaspoons vanilla
Instructions
- Preheat the oven to 350 degrees. Place dry ingredients in a mixing bowl and mix well. Combine wet ingredients in another bowl. Add wet to dry and mix well. Pour into an oiled baking pan and bake about 40 minutes. Place chocolate chips in a broiler and melt, stirring frequently. Combine with remaining frosting ingredients and put in a blender until smooth. Refrigerate until it thickens. Cool cake before frosting.
