1 large bunch (or more) fresh basil or cilantro leaves
¼ to 1/3 cup of olive oil
¼ to 1/3 cup of raw walnuts
½ teaspoon chopped parsley
Celtic Sea Salt
¼ cup mellow white miso
Optional: 1 or 2 tablespoons fresh lemon juice
Blend all ingredients thoroughly in food processor or blender. The basil pesto is excellent tossed with hot pasta, plus grilled vegetables and tofu, or stir a bit into a pot of vegetable soup. The cilantro pesto is delicious with stir fried vegetables, or added to black beans, corn and vegetable salads, with a bit of spicy tomato salsa. Either pesto is excellent as a sandwich spread or dip.
