Espresso Scones

Ingredients
- 2 ½ cups of teff flour
- ½ cup of grain coffee
- ¼ teaspoon cinnamon
- 1 tablespoon arrowroot
- 1 tablespoon baking powder
- ½ teaspoon Celtic Sea Salt
- 1 teaspoon vanilla
- 2/3 cup extra-virgin olive oil
- 2/3 cup of maple syrup
- ¾ cup of dried fruit (apricots, dates, figs) cut into small pieces
Instructions
- Preheat oven to 350 degrees. Combine and mix all the ingredients. Using your hands shape the dough into 2 inch patties round, ½ inch high. Bake for 20 minutes.
