Deluxe Vegetable Soup

Ingredients
- 8 cups of water
- 1 cup of peas
- 1 cup of corn
- 2 potatoes, unpeeled and cut into chunks
- 1 artichoke
- 3 stalks of celery, chopped
- 2 carrots, thinly sliced
- 1 large onion
- 1 small zucchini
- 1 stalk of broccoli
- 2 tablespoons of extra-virgin olive oil
- 1 tablespoon tamari sauce
- 4 tablespoons vegetable broth powder
- ½ teaspoon oregano
- ½ teaspoon thyme
- 2 teaspoons of parsley
- Celtic Sea Salt
- Honey
- Dark miso
- Cayenne Pepper
- Black Pepper
Instructions
- Steam the potatoes and carrots for 10 minutes. Saute the onions in the oil in a large pot until they are slightly transparent. Then add the water and the rest of the ingredients, including the steamed vegetables. Cook the soup on low to medium heat for 40-60 minutes until all the vegetables are tender but not soggy and the flavors are developed. Take 1-2 cups of water with some vegetables from the soup and blend it or use a food processor to liquefy and add it back to the soup. This adds flavor and depth and gives the soup a natural thickness. Add spices to taste. Add honey. After the soup is finished cooking add the miso and blend with the broth to add taste and nutritional value.
