Deluxe Marinara Sauce

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 1/2cup onion, chopped
- ½ cup shiitake mushrooms, sliced thin
- 2 tablespoons garlic, minced
- 5 cups fire roasted tomatoes
- 1 ½ cups tomato juice
- ½ cup chopped zucchini
- ¾ cup tomato paste
- 2 tablespoons tamari
- 1 tablespoon balsamic vinegar
- 2 tablespoons basil, minced
- 2 tablespoons parsley, minced
- 1 teaspoon oregano
- 1 teaspoon thyme
- ½ teaspoon rosemary
- ½ teaspoon savory
- Celtic Sea Salt
- Black pepper
Instructions
- Place oil in a 3 quart saucepan on medium high heat. Add mushrooms, garlic, onion and cook for 5 minutes, stirring frequently. Reduce heat to a simmer, add tomatoes, tomato juice and tomato paste, cook 5 minutes, stirring frequently. place mixture in a blender and blend until smooth. Add remaining ingredients and simmer over low heat for 20 minutes, stirring occasionally.
