1 ¼ pounds fresh or frozen strawberries, raspberries, blackberries or blueberries
½ cup of maple syrup
2 tablespoons natural granular sweetener
1 ½ teaspoons guar gum or xantham gum
Few dashes Celtic Sea Salt
2 teaspoons lemon juice
½ teaspoon vanilla
Mix the arrowroot into the fruit juice completely, then mix it with the remaining ingredients. Cook over medium high heat, stirring constantly until thickened. Let the mixture cool a few minutes, then scoop into the pie crust and chill. Serve with a topping of choice.
