Cucumber Yogurt Sauce

Ingredients
- 1 large cucumber
- 1 ½ teaspoons Celtic Sea Salt
- ½ cup plain yogurt
- 3 teaspoons of chopped mint
- 1 teaspoon honey
- ½ teaspoon chopped parsley
- ½ teaspoon oregano
- ½ teaspoon apple sauce
- Black Pepper
Instructions
- Peel the cucumber, cut in halves, and scoop out the seeds with a teaspoon. Coarsely grate the cucumber into a bowl, sprinkle on the salt and pepper, let sit for 6 minutes. Drain off the remaining liquid. Stir yogurt and mint into the cucumber. Serve small dishes as an accompaniment.
