Country Vegetable Soup

Ingredients
- 6 large tomatoes, cored and chopped
- 2 green peppers, chopped
- 2 small bunches of spinach, lightly chopped
- 4 green onions, chopped
- 1 large carrot, diced, quartered and sliced
- 1 cup of water
- 2 vegetable bouillon cubes or 2 teaspoons vegetable broth powder
- 3 teaspoons chopped parsley
- ¼ teaspoon sea kelp
- 1 teaspoon honey
- 1 teaspoon chopped basil
- 1 teaspoon chopped thyme
- ½ teaspoon Celtic Sea Salt
Instructions
- Mix all the ingredients together and bring to a quick boil. Turn down the heat immediately and simmer on low to medium heat for about 35 minutes until the vegetables are tender and the flavors mingle.
