Country Apple Pie

Ingredients
- 6-8 large baking apples, peeled cored and chopped
- 1/2 cup of raisins
- ¼ cup of water
- 2 ½ tablespoons arrowroot powder
- ¼ teaspoon Celtic Sea Salt
- 3/4 cup maple syrup
- 2 tablespoons lemon juice
- 2 teaspoons cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon vanilla
- Pie Crust
Instructions
- Simmer the apples with water in medium heat for 10minutes until tender. Drain the apples and save the liquid. Cool the liquid and mix with the arrowroot powder and sea salt. Heat it in a saucepan until it thickens, stirring constantly. Preheat the oven to 425 degrees. Mix the apples, arrowroot mixture and remaining ingredients together and scoop into the bottom of the pie crust. Add a top crust and bake for 40 minutes until browned. Cool pie before slicing.
