Ingredients
- Dry ingredients
- 1 cup of cornmeal
- ½ cup spelt flour
- ½ cup kamut flour
- 3 tablespoons powdered egg replacer
- 2 tablespoons arrowroot powder
- 4 tablespoons baking powder
- 1 teaspoon guar gum or xantham gum
- Wet ingredients
- ¾ cup nut milk
- 1/3 cup extra-virgin olive oil
- 3 tablespoons liquid sweetener
- 1 teaspoon honey
- ½ teaspoon vanilla
- 2 tablespoons liquid lecithin
Instructions
- Preheat the oven to 400 degrees. Mix the dry and wet ingredients separately. Slowly add the dry mixture to the wet, mixing carefully. Scoop into a lightly oiled and floured 8 inch pan and bake for about 35 minutes before slicing. Makes 16 2 inch pieces.
