Collard Beans

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 1/2 cups onion, sliced thin
- 1 tablespoon ginger, minced
- 1 tablespoon garlic, minced
- ½ cup carrots, sliced thin
- ½ cup of water
- 6 cups of collard greens, chopped
- 1 ½ cup black eyed peas, cooked
- 2 tablespoons tamari
- 2 teaspoons thyme
- 2 teaspoons oregano
- ½ teaspoon Vegetarian Worcestershire sauce
- ½ teaspoon rosemary
- ½ teaspoon basil
- ½ teaspoon black pepper
- Pinch of cayenne pepper
- Celtic Sea Salt
Instructions
- Place oil in a pot on medium high heat. Add onion, ginger, garlic, carrots and cook for 5 minutes, stirring occasionally. Ad collards and water, reduce heat to low and cook for 10 minutes, stirring occasionally. Add remaining ingredients, cook for 5 minutes.
