Cilantro Pasta

Ingredients
- 4 quarts of water
- ½ pound dried linguini or fettucine rice pasta
- ¼ cup ground walnuts
- ¼ ground sunflower seeds
- 1 large bunch of cilantro leaves, rinsed
- 5 cloves of garlic, minced
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon umeboshi vinegar
- Celtic Sea Salt
- Black pepper
Instructions
- Boil 4 quarts of water. Add pasta and cook until tender. When done drain the pasta in a colander. Rinse and drain the pasta under cold water. In a food processor, grind the sunflower seeds and walnuts into meal. Add the garlic, cilantro, water, olive oil, umeboshi, honey, sugar, parsley. Blend all together. Taste and adjust the seasoning. Put in pasta in serving bowls and add mixture on top.
