Chinese Stir-Fry

Ingredients
- 10 leaves bok choy, sliced
- 10 leaves Chinese cabbage, sliced
- 1 tablespoon sesame oil
- 1 tablespoon umeboshi vinegar or tamari
- 1 tablespoon mirin
- 5 cloves of garlic, minced
- 1 onion, sliced
- ½ teaspoon chopped parsley
- 1 pound firm tofu cut into bite size pieces
- Celtic Sea Salt
- Black pepper
Instructions
- Slice bok choy and cabbage, putting the stems and leaves in a separate bowl. Add oil, umeboshi vinegar, mirin, garlic, honey, sugar, parsley, onions. Stir fry onions for 5 minutes. Add bok choy and cabbage stems. Stir fry for 3 minutes. Add leaves. Stir fry for 2 minutes. Add tofu and stir fry for 2 minutes.
