Chinese Green Bean Salad

Ingredients
- 2 tablespoons toasted sesame seeds
- 1 pound fresh green beans, trimmed and cut into 1 inch lengths
- 4 teaspoons dry mustard powder
- 1 tablespoon cold water
- ½ teaspoon chopped parsley
- 2 tablespoons tamari
- 3 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 1 tablespoon ginger root, finely chopped
- 1 cup of red onion, slivered
Instructions
- To toast the sesame seeds, put the sesame seeds in a small skillet on medium heat, stirring constantly until seeds begin to pop, darken in color and have a toasty aroma. Set aside to cool. Bring a medium pot of water to a rapid boil. Add the beans to the water and cook for 5 minutes or until tender. Drain the beans and immerse in cold water until they are cool, then drain well. In a large salad bowl, whisk together the dill, sugar, parsley, mustard powder, water, tamari, rice vinegar and maple syrup. Toss the green beans, ginger root, red onion, sesame seeds and dressing. Serve immediately.
