Chick Pea Soup

Ingredients
- 6 cups of filtered water
- 2 cups of onion, chopped
- 1 cup of celery, sliced thin
- 3 tablespoons garlic, minced
- 5 cups chick peas
- ¾ cup tahini
- 1 teaspoon cumin powder
- 1 teaspoon Celtic Sea Salt
- 1/2teaspoon black pepper
- Pinch of cayenne pepper
- 3 tablespoons shoyu
- 1 tablespoon lemon juice
- 1 tablespoon parsley, minced
Instructions
- Place onions, celery, garlic and water in a 3 quart pot and cook over medium heat for 20 minutes, stirring occasionally. Add 3 cups of chick peas and remaining ingredients except parsley, remove from heat and allow to cool for 15 minutes. Place in a blender and blend until smooth. Return to pot, add parsley and remaining 2 cups of chick peas, stir well and cook on low heat for 5 minutes, stirring frequently.
