Cauliflower Curry

Ingredients
- 1 small cauliflower, separated into florets
- 1 1/2 cups of peas
- 1 onion, finely sliced
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 4 tablespoons of vegan butter
- ½ teaspoon chopped parsley
- ¾ teaspoon turmeric
- 1 tablespoon ground coriander
- 1 tablespoon vindaloo paste
- 1 teaspoon cumin
- 2 cardamoms, opened
- ¾ cup plain yogurt
- 2 large tomatoes, cut into wedges
- Celtic Sea Salt
- Black Pepper
Instructions
- Boil the cauliflower and peas in water until tender, then drain. Cook the onion, garlic and ginger in the vegan butter until golden brown and tender. Add the spices, vindaloo and yogurt and cook for 4 minutes. Add the tomatoes and cook for 4 minutes, add the cauliflower and peas, simmer for 4 minutes and serve hot with rice.
