Cashew Sauce

Ingredients
- 1 ½ cups of whole cashews
- 3 cups of water
- 1 large onion, sliced
- 1 tablespoon sesame oil
- 1 pound of carrots, sliced
- 2 quarts of spinach leaves
- 3 tablespoons curry powder
- Celtic Sea Salt
Instructions
- Grind the cashews into a food processor. Add two cups of water and blend until creamy. Heat the sesame oil in a skillet. Add the onions, and saute for 2 minutes. Add the carrots, spinach,and 1 cup of water. Cook for an additional 5 minutes, serve hot.
