Cashew Curry

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 onion, sliced
- 2 potatoes, sliced
- 1 cup of water
- 1 cauliflower, cut into bite size pieces
- 2 carrots, sliced
- 1 cup of cashews
- 1 tablespoon curry powder
- 1 teaspoon garam masala
- 1 teaspoon coriander
- 1 teaspoon cinnamon
- 1 teaspoon turmeric
- Celtic Sea Salt
- Black pepper
Instructions
- Saute onions and potatoes in oil in a 4 quart stock pot for 10 minutes, add water when the pot dries out. Add carrots and cauliflower, saute and simmer until carrots turn bright orange. Add cashews. Saute until all the vegetables are tender. Stir in the honey, sugar and spices. Taste and adjust seasoning as desired.
