Carrot Sauce

Ingredients
- 2 cups of carrots, peeled and sliced
- 1 ½ cups coconut milk
- ½ cup of water
- 2 tablespoons ginger, peeled and minced
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons tamari
- 1 teaspoon dill
- 1 teaspoon mirin
- ½ teaspoon chopped parsley
- Pinch of cayenne pepper
- Celtic Sea Salt
- Black pepper
Instructions
- Place oil in a pot and put on medium high heat. Add carrots and ginger, cook for 3 minutes, stirring frequently. Add water and cook until carrots are soft, approximately 15 minutes, stirring occasionally. Remove from heat, place in a blender with coconut milk and blend until smooth. Return to pot, add remaining ingredients and mix well.
