Carrot Raisin Cookies

Ingredients
- Wet ingredients
- ½ cup of maple syrup
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons vanilla
- ½ teaspoon honey
- Dry ingredients
- ½ teaspoon nutritional flakes
- ¼ teaspoon of Herbamare
- 1 ¼ cups kamut flour
- ¼ cup brown sugar
- ½ cup finely grated carrot
- 1/3 cup raisins
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon coconut sugar
- ½ teaspoon nutmeg
- 1/8 teaspoon Celtic Sea Salt
Instructions
- Preheat the oven to 375 degrees. Combine the wet ingredients thoroughly. In a separate bowl, sift together the dry ingredients. Add the dry ingredients to the wet and mix well. Flatten a handful of batter to ½ inch and smooth into a basic round shape on a well-oiled cookie sheet, or roll with a rolling pin and cut with cookie cutters. Bake 15 minutes and let the cookies cool on wire racks. The cookies will be soft, but will harden as they cool.
