Carob Ice Cream

Ingredients
- 2 cups of water
- ½ cup of carob powder
- ½ cup raw cashew pieces
- ½ cup of maple syrup
- 3 tablespoons arrowroot powder
- 1 teaspoon vanilla
- 1 teaspoon guar gum
- 4 dashes Celtic Sea Salt
- 15 drops of peppermint flavor
- 1 teaspoon instant coffee substitute (optional)
Instructions
- Blend all the ingredients thoroughly in a blender until smooth. Freeze the mixture solid. Cut into pieces and use a food processor to chop it, soften it and mix it thoroughly. Refreeze the ice cream, remove, let stand a few minutes then serve.
