Carob Cake

Ingredients
- 1 ¾ roasted carob powder
- 2 ¼ cups spelt flour
- 3 cups of teff flour
- 2 tablespoons baking powder
- ½ teaspoon Celtic Sea Salt
- ½ pound of tofu
- 1 ¼ cups of fruit juice
- ½ teaspoon cinnamon
- ¼ teaspoon of Herbamare
- ½ cup extra-virgin olive oil
- 2/3 cup maple syrup
Instructions
- Preheat oven to 375 degrees. Sift roasted carob powder sea salt, baking powder and flour into a large mixing bowl. Blend all the other ingredients in a food processor and blend. Add the wet ingredients to the dry and mix well. Pour into lightly oiled baking dish. Bake for 30 minutes. Cool on rack before frosting.
