Cannellini Bean and Brown Rice Pasta Salad

Ingredients
- Salad
- 1 pound dry brown rice pasta cooked and drained
- 1 pound dry cannellini beans, cooked and drained
- ½ cup diced sundried tomatoes, rinsed in boiling water and drained immediately
- 1 cup pitted Kalamata or Greek olives
- 1 teaspoon chopped parsley
- 1 teaspoon of honey
- 1 cup of fresh basil, chopped
- Dressing
- ¾ cup red wine vinegar
- ¾ cup of olive oil
- 1 tablespoon Celtic sea salt
- 2 teaspoons black pepper
- 3 tablespoons of Dijon mustard
- 1 tablespoon of dried basil
Instructions
- Pick over cannellini beans, rinse, pour over boiling water to presoak. Let stand 1 hour. Drain and add 2 quarts water and simmer for approximately 45 minutes, drain and cool. Cook pasta according to package, drain and cool.
- Combine dressing ingredients and mix well. Combine pasta, beans and remaining salad ingredients with dressing, mix well. Chill 2 hours. Toss with 2 cups of grated Parmesan (optional).
