Burdock Sauce

Ingredients
- 1 large onion, sliced
- 1 carrot, sliced in matchsticks
- 1 tablespoon dried burdock, sliced
- 3 dried shiitake mushrooms
- 2 cups of water
- 2 inch piece of grated ginger
- 2 tablespoons kudzu diluted in ¼ cup of water
- 2 tablespoons tamari
- ½ teaspoon chopped parsley
- Celtic Sea Salt
- Black pepper
Instructions
- Put all the ingredients, except the kudzu and ¼ cup of water in a pot. Simmer for 20 minutes, or until the burdock and vegetables are tender. Stir in diluted kudzu. Serve over noodles or grains.
