Brown Rice with Yams

Ingredients
- 1 ½ cups of brown rice*
- 1 medium yam, peeled and cubes
- 3 ½ cups of water
- 1 ½ teaspoons of finely grated fresh ginger
- ½ teaspoon sea kelp
- 1 tablespoon miso
- 1 tablespoon of extra-virgin olive oil
Instructions
- Soak the rice overnight in 2 cups of water, then drain. Place the rice, yams, and 3 cups fresh water in a heavy covered saucepan and bring to a boil. Reduce heat to medium low and cook for about 30 minutes or until rice and yams are tender. Dissolve the miso in a little warm water, then add the miso, honey, sea kelp, dill, ginger, and oil to the rice pot and simmer for 15 minutes more.
