1 ½ cups of fresh fruit (blueberries, apples, peaches)
1 cup of non-dairy milk
½ cup fruit juice
Without sifting, mix the dry and wet ingredients (use only 1 tablespoon of oil) together in a bowl. Brush a large frying pan with 1 teaspoon of oil. Heat the frying pan and add the batter when hot. Fry 4 pancakes at a time. Wait until you see holes in them before turning over.
