Blueberry Pie

Ingredients
- Pie crust
- 1 ½ cups teff flour
- ½ cup of date sugar
- ¼ teaspoon nutmeg
- ½ cup extra-virgin olive oil
- 1/3 cup of water
- ½ teaspoon Celtic Sea Salt
- The filling
- 2 cups of blueberries
- ¼ cup of cold water
- Pinch of Celtic Sea Salt
- ¼ cup of rice vinegar
- 1 tablespoon kudzu
Instructions
- Preheat oven to 375 degrees. Mix up pie crust ingredients. Lightly oil pie plate. Press dough into pie plate. Make several holes in the crust with a fork. Bake for 10 minutes. Add filling. Simmer blueberries with a pinch of sea salt for a few minutes. Add rice syrup, honey, maple syrup, molasses and simmer briefly. Add kudzu dissolved in cold water. Stir. Taste and add more syrup as a sweetener. Pour filling into pie crust. Cook for 10 minutes.
