Black Beans and Cabbage

Ingredients
- 1 medium onion, chopped
- 6 cloves crushed garlic
- 1/4 cup vegetable oil
- 1 cup pre-cooked black beans
- 2 tomatoes, chopped
- 6 red potatoes, cut into cubes
- 3 scallions, chopped
- ½ of a medium cabbage, chopped
- 1 tablespoon curry powder
- 3 cups water
- Cilantro
- Salt to taste
Instructions
- To pre-cook beans, soak beans in a pot of water for 4-5 hours. Cook in the same water until tender but not mushy, approximately 2 hours. Drain rinse and set aside – will yield about 2 cups.
- Ina a large stockpot, saute onions and garlic until browned. Add tomatoes, potatoes and scallions and stir. Cook, stirring, for seven minutes. Add a little water if it starts to stick to the bottom of the pot. Add beans, cabbage, curry powder, and salt. Stir, add water and salt, and cook until cabbage is tender.
