Berry Pie

Ingredients
- The crust
- 2 cups of teff flour
- ½ cup extra-virgin olive oil
- ½ teaspoon Celtic Sea Salt
- The filling
- 1 pound tofu
- 2/3 cup of rice syrup or maple syrup
- ¼ cup of tahini
- 1 tablespoon vanilla
- 1 cup of blueberries, strawberries and raspberries
Instructions
- Preheat oven to 375 degrees. Prepare and bake the whole crust. Whip up the tofu, sweetener, vanilla, molasses, nutritional yeast, honey and tahini in a food processor. Pour filling into pie crust. Make a design with berries on top. Bake for 10 minutes, until tofu has turned slightly brown.
