Berry Meringue

Ingredients
- 3 cups of sliced strawberries
- 2 cups of cherries, pitted and halved
- ¼ cup frozen apple juice concentrate
- 1 tablespoon fresh lemon juice
- 1 tablespoon pectin
- 1 teaspoon pure vanilla extract
- 1 teaspoon lemon extract
- 6 egg whites
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon maple syrup
- ½ teaspoon honey
Instructions
- In a medium size pot, combine all the ingredients except the egg whites. Bring to a boil stirring constantly. Reduce the heat and simmer. Continue stirring constantly for 5 minutes until the mixture begins to thicken. Pour it into a bowl to cool. Beat the egg whites, then fold into fruit. Transfer the mixture into a baking pan. Bake uncovered at 375 degrees for 20 minutes. Remove from oven and let cool.
