In a medium size pot, combine all the ingredients except the egg whites. Bring to a boil stirring constantly. Reduce the heat and simmer. Continue stirring constantly for 5 minutes until the mixture begins to thicken. Pour it into a bowl to cool. Beat the egg whites, then fold into fruit. Transfer the mixture into a baking pan. Bake uncovered at 375 degrees for 20 minutes. Remove from oven and let cool.
