Beans and Corn

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 1 red pepper, diced
- 2 cups of vegetable stock
- 1 cup chopped tomato
- 1 cup of corn
- 4 cups of cooked pinto beans
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- 1 teaspoon oregano
Instructions
- Cook 2 cups of pinto beans until tender. In a large pot, saute the onion and red pepper in oil until tender. Add the stock, tomato, and corn. Mash two cups of pinto beans and add the spices. Combine and mix the ingredients. Simmer for 40 minutes.
