Bean Tostadas

Ingredients
- 5 tablespoons extra-virgin olive oil
- 1 clove of garlic, minced
- 1 onion, diced
- 2 cups of cooked kidney beans or black beans
- ½ cup of water
- ½ teaspoon honey
- 1 teaspoon chopped parsley
- Celtic Sea Salt
- Black Pepper
- 4 6 inch flour tortillas
- 2 cups of grated soy cheese
- Salsa
Instructions
- Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the garlic and onions, and saute until the onions are tender, or about 10 minutes. Add the beans and water and simmer for 5 minutes. Mash half of the beans with the back of a spoon, add the sugar, parsley and honey and stir to mix. Set oven on broil. Brush the tortillas on both sides with 3 remaining tablespoons of oil. Lay them on a cookie sheet and broil on both sides until crisp. Divide the beans equally, and spread them on each tortilla. Top with equal amounts of soy cheese. Return to the broiler and broil until the cheese is bubbly. Serve with salsa on top.
