Banana Tofu Pie

Ingredients
- Pie crust
- 1 ½ cups of spelt flour
- ½ teaspoon cinnamon
- ½ cup of toasted and ground almonds
- 1/3 cup extra-virgin olive oil
- 1/3 cup of maple syrup
- ¼ teaspoon Celtic Sea Salt
- Banana Filling
- 1 pound of tofu
- 6 small ripe bananas
- ½ teaspoon nutritional flakes
- 1/8 teaspoon of Herbamare
- 9 soft dates
Instructions
- Preheat oven to 375 degrees. Roast almonds for 10 minutes. Grind almonds in a food processor. Combine the almond meal with the other pie ingredients in a mixing bowl. Then spread the dough in a pie pan and put holes in the crust with a fork. Bake for 10 minutes. Blend tofu, bananas, sugar molasses, honey, vanilla and dates in a food processor until creamy. Add the filing on top of the crust and bake for 10 minutes.
