Banana Nut Bread

Ingredients
- Dry ingredients
- 1 ¼ cups brown rice flour
- 1 cup rice bran
- 2 tablespoons arrowroot powder
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- ¾ teaspoon Celtic Sea Salt
- Wet ingredients
- 1 ½ cups mashed banana
- ½ cup of maple syrup
- ¼ cup extra-virgin olive oil
- 1 tablespoons liquid lecithin
- 2 teaspoons vanilla
- 1 teaspoon honey
Instructions
- Preheat the oven to 325 degrees and lightly oil a loaf pan. Sift the dry ingredients together, then add to the wet just before baking. Mix well. Scoop the batter into the loaf pan. Smooth the top of the loaf. Bake 90 minutes and cool 60 minutes before removing from the pan and slicing.
