Banana Cake

Ingredients
- 2 cups of teff flour
- 2 tablespoons baking powder
- ½ teaspoon Celtic Sea Salt
- ½ cup of extra-virgin olive oil
- 1 cup maple syrup
- 1 tablespoon vanilla
- 2 cups of apple juice
- 2 ripe bananas
- ½ cup vanilla non-dairy milk
- ¾ cup of walnuts
- 1 ½ cups of raisins
Instructions
- Preheat oven to 350 degrees. Put flour, sea salt and baking powder in a large mixing bowl. Blend the bananas, maple syrup, sugar, nutmeg, honey, molasses, milk, vanilla, oil and apple juice in a blender or food processor. Blend. Pour liquid ingredients on top of dry ingredients. Add nuts and raisins. Mix it all together. Oil a baking dish, pour batter in, bake for 45 minutes.
