Baked Tofu Sandwich

Ingredients
- 1 pound of tofu, sliced in 3 equal lengths
- 2 tablespoons tamari
- ½ cup peanut sauce
- ¼ cup green onion, diced
- 1 tablespoon ginger, minced
- 1 tablespoon carrot, grated
- 1 tablespoon beet, grated
- 2 mushrooms, sliced
- 6 slices whole grain bread
- 2 Romaine lettuce leaves
- 1 tomato, sliced thin
- 3 slices red onion
- 1 avocado, sliced thin
Instructions
- Preheat oven to 375 degrees. Place tofu in tamari for 20 minutes. Remove cutlets and place in a shallow baking dish. Add peanut sauce, green onion and ginger, bake for 20 minutes. Allow to cool before placing on bread with remaining ingredients.
