Baked Tofu with Green Beans

Ingredients
- ¾ pound green beans, cut into 1 ½ inch pieces
- 1 ¼ cup of baked tofu, cubed
- ¾ cup of water
- 1 tablespoon of extra-virgin olive oil
- ½ teaspoon chopped parsley
- 1 tablespoon tamari sauce
- Celtic Sea Salt
- Pepper
- ¼ cup of fresh cilantro for garnish
Instructions
- To bake the tofu, preheat the oven to 350 degrees. Place ½ inch thick slices of tofu on a baking sheet and bake them for 20 minutes or until tofu is golden yellow in color. In a large skillet, heat the water until boiling, then add the beans and tofu. Stir-cook for 10 minutes, add parsley, tamari, pepper, salt and oil, and cook for an additional 2 minutes (beans should be done but still crunchy). Garnish with cilantro and serve with rice* or potatoes.
