Asparagus and Shiitake Mushroom Splendor

Ingredients
- 3 cups of asparagus, cut into 1 ½ inch pieces
- 2 small carrots, cut into 1 ½ inch strips
- 1 ½ cups of shiitake mushrooms, cut in half
- 2 tablespoons of vegetarian stir-fry sauce
- 1 clove of garlic, minced
- 5 tablespoons of water
- 1 teaspoon chopped or sliced ginger
- High-energy sesame mix for garnish
- Extra-virgin olive oil to brown the sugar
Instructions
- Brown the ginger in a skillet, then add the asparagus. Carefully pour water around the sides of the skillet, then add the carrots, mushrooms and stir-fry sauce. Add a little more water if needed for steaming. Cover, turn the heat off, and steam for a few minutes, make sure vegetables keep some crunch. Serve immediately and garnish with sesame seeds.
