Artichoke Salad

Ingredients
- 8 ounce can of artichokes
- 1 pound asparagus spears, cooked and chilled
- 1/3 cup carrot, shredded
- 1/3 cup red cabbage, shredded
- ½ cup organic plain yogurt
- 1 cup strawberries
- 2 teaspoons honey
- 2 teaspoons mint leaves
- ½ teaspoon dill
- ½ teaspoon honey
Instructions
- Toss together artichokes, asparagus, carrot and red cabbage.in a blender or food processor, blend together the yogurt, dill, honey, strawberries, honey and mint. Blend until smooth. Spoon dressing over salad and serve.
