Applesauce Cake

Ingredients
- 4 ½ cups of water
- 1 1/3 cups of teff grain
- 1 cup of raisins
- 1/8 cup of rice syrup
- 2 pinches of Celtic Sea Salt
- 7 cups of apples
Instructions
- Boil 4 cups of water in a large stockpot. Add teff, rice syrup, raisins and a pinch of sea salt. Simmer for 20 minutes, until the water is absorbed. While waiting for the water to boil, wash and thinly slice the apples. Simmer apples, honey, sugar, vanilla, ¼ cup of water and a pinch of sea salt for about 20 minutes, or until the apples turn to sauce. Stir occasionally. Pour the cooked teff and raisins into a cake pan. Top with fresh hot applesauce. When cool, you can cut the teff into squares, like brownies.
