Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups assorted vegetables, diced (onion, bell pepper, mushrooms, zucchini carrots)
- 1 tablespoon tamari
- 1 tablespoon fresh herbs (basil, oregano, thyme)
- 2 tablespoons olives, sliced
- ½ teaspoon maple syrup
- ½ teaspoon honey
- Pinch of crushed pepper flakes
- Celtic Sea Salt
- Black pepper
Instructions
- Place quinoa and at least 4 cups of water in a pot and boil until tender. Place vegetables with tamari and let marinade for an hour. Add remaining ingredients with quinoa and mi well.
