Vegetable Frittata

Ingredients
- 2 tablespoons vegan butter
- 1 medium onion, chopped
- 1 medium green bell pepper, cut into small cubes
- 1 cup of broccoli florets, thinly sliced
- 1/8 cup of Italian parsley, chopped
- 8 large eggs
- 1/4 cup of water
- ½ cup of cheddar cheese (Optional)
- ½ teaspoon dill
- 1 clove of garlic, minced
- Celtic Sea Salt
- Black pepper
- Salsa for topping
Instructions
- Preheat the oven to 375 degrees. In a cast iron skillet, melt the vegan butter and saute the onion, bell pepper, broccoli for 2 minutes and set aside. In a large bowl whisk the eggs, water, dill, garlic, sugar, cheese, salt and pepper together. Mix vegetables into the egg mixture. Pour mixture in a cast iron skillet and bake until cooked through.
