Vegan Chicken Noodle Soup

Ingredients
- 8 cups of water
- 1 ½ cups of onion, chopped
- ¾ cup celery, sliced thin
- ¾ cup carrot, sliced thin
- ¾ cup parsnip, sliced thin
- 2 tablespoons garlic, minced
- 1 ½ cups Chicken seitan
- 1 cup of noodle pasta, cooked
- 2 tablespoons tamari
- 1 ½ tablespoons chopped parsley
- Celtic Sea Salt
- Black Pepper
Instructions
- Place water and vegetables in a stock pot and cook until soft, about 25 minutes. Add seitan and cook for 5 minutes, stirring occasionally. Add remaining ingredients, reduce heat to low and cook until pasta is done, stirring occasionally.
