Preheat the oven to 325 degrees. Grind the wheat berries with a blender or food processor. Mix them with the sweetener and vanilla. Stir in the remaining ingredients together in a separate bowl. Gradually stir in the dry ingredients into the wet and mix well. Lightly oil and flour a 9 inch square baking pan. Gently press the mixture into the pan. Bake for 50 minutes or until lightly browned. The cake may be topped with coconut frosting.
