Stuffed Bitter Melon Soup

Ingredients
- 2 medium bitter melons, slit ¾ open lengthwise and seeded
- 2 ounces package bean thread, cut into 1 inch pieces
- 6 shiitake mushrooms, soaked in hot water and minced
- 2 ½ tablespoons TVP granules (textured vegetable protein)
- ¾ pound tofu, crumbled
- 2 ½ teaspoons nutritional yeast
- ½ teaspoon sea kelp
- 10 peppercorns (optional)
- 1 ½ teaspoons preserved cabbage
- 1 teaspoon tamari sauce
- 6 cups of water
- Fresh chopped coriander for garnish
Instructions
- Cover the bean thread with hot water and soak for 5 minutes, then drain. In a separate bowl, soak the TVP in 4 tablespoons of hot water for 5 minutes and drain. In a large bowl, mix together all the ingredients except the bitter melons. In a soup pot, bring the water to a boil. While water is coming to a boil, stuff the melons with the mixture from the bowl, then carefully put the melons into the boiling water. Turn heat to medium low, cover, and simmer for 25 minutes. Remove the melons to a cutting board and cut into inch-long pieces. Place melon pieces in bowls, cover with hot broth, and garnish with coriander. For a meal, serve with brown rice* and a protein dish.
