Spinach Soup

Ingredients
- 1 1/4 pounds of fresh spinach
- 2 cups of almond milk
- 1 small clove of garlic, minced
- 1 tablespoon of tamari
- Celtic Sea Salt
- ½ teaspoon basil
- ½ teaspoon honey
- ½ teaspoon chopped parsley
- Black pepper
- ½ teaspoon sea kelp
- 4 tablespoons vegan butter
- 4 tablespoons of arrowroot
Instructions
- Carefully wash the spinach to remove dirt. Steam the spinach, and then blend it with all the ingredients except butter and arrowroot. For the roux, melt the vegan butter on medium heat in a large saucepan and add the arrowroot, stirring until it browns for several minutes. Then add the blended mixture to the saucepan and heat just up to boiling. Serve hot with chopped almonds.
