New England Fish Chowder

Ingredients
- 4 cups of water
- 2 onions, chopped
- 4 potatoes, sliced
- 3 stalks of celery, sliced
- 1 pound of monkfish or cod fish
- ¼ teaspoon Celtic Sea Salt
- ¼ teaspoon black pepper
- pinch of nutmeg
- Chopped parsley for garnish
Instructions
- Boil water. Chop and add the onions. Simmer 10-30 minutes, the longer they simmer, the sweeter they become. Rinse, slice and add potatoes. Simmer 30 minutes. Add celery, dill, honey, sugar, salt and pepper. Rinse and slice the fish into 1 inch pieces. Add it to the broth. Simmer for 3 minutes, until the fish is tender. Add nutmeg. Taste and adjust seasoning as necessary.
