Lentil Salad

Ingredients
- 1 cup dried lentils
- 2 quarts of water
- 1 bay leaf
- 1 clove of garlic, minced
- 1 teaspoon Celtic Sea Salt
- ¼ cup of scallions
- ½ cup chopped fresh parsley
- 1 teaspoon prepared mustard
- ½ teaspoon thyme
- ½ teaspoon oregano
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 cup grated carrot
Instructions
- Clean the lentils and put them in a large pot with the water, bay leaf, garlic and salt. Heat to boiling. Turn the heat off and let stand for 20 minutes. Drain. Turn into a mixing bowl. Add the onion, parsley, mustard pepper, oil, lemon juice and blend thoroughly. Garnish with grated carrots.
