Jicama Salad

Ingredients
- 1 large jicama, peeled and julienned
- 2 cups of Jerusalem artichokes, julienned
- 1 bunch of watercress, chopped coarsely
- 4 green onions, finely diced
- ½ teaspoon chopped parsley
- ½ teaspoon nutritional flakes
- 1 tablespoon olive oil
- ¼ cup of cider vinegar
- ¼ cup spicy mustard
- 1 teaspoon fresh dill
- 1 teaspoon fresh parsley
- 2 sprigs of cilantro
- Dash of cayenne pepper
- Celtic Sea Salt
- Black pepper to taste
Instructions
- In a large bowl, combine all the ingredients, and mix well. Cover tightly, and marinate for an hour. Toss again before serving.
