1 pound of cod, rinsed and cut into bite size pieces
½ pound of mushrooms, rinsed and sliced
2 bunches of watercress, sensed and sliced into bite size pieces
1 teaspoon chopped parsley

Heat a wok. Add ginger, oil, mirin, tamari. Stir in the onions, parsley, basil, sugar, honey, garlic and carrots. Cover and fry for 5 minutes. Add celery, mushrooms and cod. Stir-fry for 3 minutes. Then add the watercress. Stir-fry for 2 minutes. The cod will flake and almost dissolve in the vegetable juices. Allow at least 10 minutes to cook.
