Fish Stir-fry

Ingredients
- 2 tablespoons sesame oil
- 4 tablespoons mirin
- 3 inch piece of ginger, grated
- 6 cloves of garlic, sliced
- 2 onions, sliced
- 2 large carrots, sliced into matchsticks
- 4 stalks of celery, sliced
- 1 pound of cod, rinsed and cut into bite size pieces
- ½ pound of mushrooms, rinsed and sliced
- 2 bunches of watercress, sensed and sliced into bite size pieces
- 1 teaspoon chopped parsley
- Celtic Sea Salt
- Black pepper
Instructions
- Heat a wok. Add ginger, oil, mirin, tamari. Stir in the onions, parsley, basil, sugar, honey, garlic and carrots. Cover and fry for 5 minutes. Add celery, mushrooms and cod. Stir-fry for 3 minutes. Then add the watercress. Stir-fry for 2 minutes. The cod will flake and almost dissolve in the vegetable juices. Allow at least 10 minutes to cook.
